It is time to start thinking of my favorite summer recipes. Over the next few weeks, I will share with you a few of my delicious and simple summer foods to make for family and friends. I am sure one of these recipes will be become a favorite for you.
Let’s start with kale chips, which incidentally I make all year round.
I have been making these kale chips for a number of years. I think I was ahead of my time, since I see recipes for them all the time now. I have even noticed that you can buy them in a bag at the health food store. My kale chips are really the best. They are fabulous! They transform a healthy green into a treat as addictive as potato chips. I use this recipe as an appetizer.
Crispy Kale Chips
Toss four cups torn kale leaves (remove stems) with 1-teaspoon olive oil and ¼ teaspoon kosher salt. (I tend to sprinkle a little more olive oil and salt after I put it on the wire rack)
Spread in an even layer on a large wire rack on top of a baking pan. Bake 350 degrees for 15 minutes or until crisp.
Warning: You may want to double the recipe, since the kale shrinks down to nothing. You will want more of these chips to eat!
