A Family Favorite-Linguini with White Clam Sauce

“Linguine with White Clam Sauce”

This is such a flavorful and easy clam sauce. Trust me, you will make it all the time. Of all the dishes I have made over the years, my children always remember this one being made from when they were very little. They loved it then and now! Of course, now I have to substitute gluten free pasta, but you may not have to. I also eat this over cooked spinach for myself if I want some more greens. Enjoy!

White Clam Sauce

Ingredients:

¼ cup olive oil

½ cup chopped onion

3 cloves garlic, minced

½ cup chopped parsley

½ cup dry white wine

3 cans chopped or minced clams (I do 2 chopped and 1 minced)

1 teaspoon lemon juice

½ teaspoon salt

1/8-teaspoon pepper

Dash ground red pepper

8 ounces gluten free linguini, cooked, drained

In large skillet, heat olive oil over medium heat.

Add onion and garlic. Cook, stirring, one minute. Add parsley and wine. Cook, stirring one minute. Add next five ingredients. Stirring frequently, simmer five minutes. Toss with linguini. Optional: sprinkle Parmesan cheese on top. Makes 4 servings.
