Kale Soup Recipe

I need to make this soup one more time before the weather turns warm. It is quick, easy, and very delicious. I buy the kale already chopped and washed to save some time when making this recipe. I love kale so I just add huge handfuls. Also, for this recipe I use Al Fresco’s (www.alfrescoallnatural.com) sweet apple chicken sausage, which makes this soup nice and sweet. I am going to try it with another flavor next time.

The first time I made this soup was for the ladies of the Brilliant Women’s Book Club. They are all so very brave, because I always try a new recipe for the first time on them. I know it is against all etiquette rules to do this, but they are such good friends they don’t mind. I know they will give me their honest opinion. We can always fill up on dessert if it turns out bad 😉

Ingredients:

4 Tablespoon coconut oil

2 onions chopped

4 garlic cloves, peeled and finely chopped

1 32-ounce container gluten-free chicken broth

2 large bunches of kale, washed and chopped

3 cups of water

2 pounds of chicken sausage, cooked, sliced.

Directions:

Cook the sausage and set aside. In a large soup pot, heat coconut oil and sauté onion and garlic for 5 minutes, stirring often. Add the broth and sweet potatoes, and simmer for 10 minutes. Add the kale, water, and sausage. Simmer 30 minutes.
